PEAR & DATE CRUMBLE CUSTARD POTS

This is a lovely dessert for the festive season, but can be enjoyed at any time! Perfect for those wanting to avoid dairy. Follow the instructions below and leave to set in the fridge for an hour before eating. Don’t leave for too long, as the Coconut Rollers will loose their crunchiness! Happy eating…

Ingredients:

For the crumble:

  • 10 x The Coconut Company Coconut Rollers - plus a handful to nibble on while cooking :o)

  • 50g oats

  • 1 tablespoon The Coconut Company coconut oil

  • 1 tablespoon almond butter

  • 2 tablespoons The Coconut Company coconut nectar

 

For the custard:

  • 4 tablespoons The Coconut Company coconut milk powder

  • 300 ml of warm water

  • 4 tablespoons The Coconut Company coconut sugar

  • 2 tablespoons custard powder or cornflour

  • 1 teaspoon vanilla extract

 

For the pears and dates:

  • 2 pears, diced

  • 50g chopped dates

  • 1 teaspoon The Coconut Company coconut nectar

  • 1 teaspoon mixed spice

 

Make them!

  1. First make the crumble - Crumble up the rollers and mix in a bowl with the oats. Melt the coconut oil, nut butter and coconut nectar then pour into the bowl and mix well to combine. Spoon three quarters of the mixture between 3-4 individual glass pots.

  2. Next make the custard - Place the coconut milk powder, coconut sugar and water in a pan and heat up. Mix the custard powder or cornflour with 2 tablespoons of water and vanilla then pour into the pan and whisk well on a medium heat until thickened. Set aside then leave to cool.

  3. Meanwhile place the dates and pear pieces, nectar and spices in another pan and cook for 5 minutes until starting to soften, then leave to cool too.

  4. Once the custard has cooled, give it a whisk then spoon into each pot to fill up to two thirds of the container.

  5. Spoon some of the fruit on the top of each to fill to the top, then sprinkle over a little extra oat mixture. Top with an extra coconut roller then chill in the fridge for at least 1 hour, until ready to serve.
