DARK CHOCOLATE, MANGO & COCONUT GRANOLA

If you love granola and want to ensure you are eating a healthier version without an overload of sugar - here’s the perfect recipe. The oats are given a little zing with the addition of ginger and a dash of our coconut nectar. If you are feeling really decadent, add a handful of dark chocolate and eat sprinkled over dessert!

Cooking Time: 30 minutes

INGREDIENTS:

• 300g rolled oats

• 30g coarse desiccated coconut

• 1 teaspoon dried ginger

• 3 tablespoons The Coconut Company coconut oil

• 3 tablespoons The Coconut Company coconut nectar

• 3 tablespoons The Coconut Company coconut sugar

• 2 tablespoons nut butter of your choice

• 3 tablespoons dried mango, chopped into small bite sized pieces

• 70g high cocoa dark chocolate, chopped into small pieces (optional)

MAKE IT!

1. Mix together the oats, desiccated coconut and ginger in a large mixing bowl.

2. Gently melt the coconut oil, coconut nectar, coconut sugar and nut butter on a low heat making sure you don’t burn the sugar, then pour into the bowl and mix to combine with the oats, desiccated coconut and ginger.

3. Spread out the mixture thinly onto a greased and lined large, shallow baking tray. Bake at 170C for 15 minutes, then stir well and break up any larger pieces.

4. Once cooled a little, stir in the dried mango and chocolate chunks then bake for a further 10 minutes until golden. Be careful as you must ensure the chocolate doesn’t burn. Allow to cool then stir and break up with a spoon into large bite sized pieces.

5. Keep in an airtight container for up to 3 weeks. Serve with thick Greek yogurt or milk. Alternatively, use as a crunchy topping for desserts and ice cream. Enjoy!
