BERRY & DOUBLE CHOCOLATE BLONDIES

It’s very nearly Christmas and we thought we’d celebrate with another decadent treat, made using many of our coconut ingredients. This recipe can be adapted for vegans, or those with allergens, but is super tasty and a real party treat for anyone. The preparation time is around 10-15 minutes and the blondies cook in around 25 minutes. Enjoy!

Make them!

  1. Mix together the gluten-free flour, coconut sugar and baking powder in a bowl.

  2. Melt the coconut oil and sweetened condensed coconut milk gently in a pan or in the microwave (make sure not to burn!), then whisk together with the mashed banana, eggs, oat milk and vanilla extract.

  3. Pour into the bowl and mix well to combine with the flour and coconut sugar.

  4. Spoon into a greased and lined 9 x 9 inch baking tin then scatter over the frozen berries and chocolate chunks, gently pressing in to make sure they stay in place.

  5. Bake at 180C for 25 minutes in a fan oven until golden brown and firm, then leave to cool in the tin. Cut into bars then enjoy immediately!
