Tofu & Avocado Fajitas with Teriyaki

INGREDIENTS
For the tofu mix:
1 block of firm tofu (drained) and cut into cubes
2 tablespoons The Coconut Company Coconut Aminos Teriyaki Sauce
1 teaspoon fresh ginger
½ teaspoon garlic granules or freshly minced garlic
1 tablespoon tomato puree
Juice of 1 lime
1 teaspoon The Coconut Company Coconut Sugar
1 tablespoon The Coconut Company Coconut Oil
2 celery sticks, diced
½ red pepper, diced
3 mushrooms, diced
For the fajita extras -
2 tortilla wraps
1 avocado sliced
Natural Greek or coconut yogurt
Salsa of your choice
2 table spoons of hummus
Fresh lime juice
Fresh coriander, cut finely
MAKE THEM:
Cut the tofu into small bite sized pieces then add to a bowl with the coconut aminos teriyaki sauce, ginger, garlic, tomato puree, lime juice and coconut sugar. Mix well and allow to marinate for 30 minutes.
Heat the coconut oil in a pan and add the veggies mentioned above. Cook for 5 minutes on a medium-high heat, stirring continuously.
Add in the tofu and all of the marinade juices and cook for a further 8-10 minutes until slightly caramelised - make sure it doesn’t burn!
Warm up the tortilla wraps, then serve out the tofu mixture in the middle of each. Add the extras on top and enjoy straight away!
