Tofu & Avocado Fajitas with Teriyaki

Need a fast, nutritious and tasty meal for the family? Our tofu wraps only take 5-10 mins to cook and provide a rainbow of vegetables, with the protein of tofu and ginger hit from our coconut aminos Teriyaki sauce. You can skip the marinading if you don’t have time to wait. This recipe feeds 2:

INGREDIENTS

For the tofu mix:

 

For the fajita extras -

  • 2 tortilla wraps

  • 1 avocado sliced

  • Natural Greek or coconut yogurt

  • Salsa of your choice

  • 2 table spoons of hummus 

  • Fresh lime juice 

  • Fresh coriander, cut finely

 

MAKE THEM:

  1. Cut the tofu into small bite sized pieces then add to a bowl with the coconut aminos teriyaki sauce, ginger, garlic, tomato puree, lime juice and coconut sugar. Mix well and allow to marinate for 30 minutes.

  2. Heat the coconut oil in a pan and add the veggies mentioned above. Cook for 5 minutes on a medium-high heat, stirring continuously.

  3. Add in the tofu and all of the marinade juices and cook for a further 8-10 minutes until slightly caramelised - make sure it doesn’t burn!

  4. Warm up the tortilla wraps, then serve out the tofu mixture in the middle of each. Add the extras on top and enjoy straight away!
