Coconut, Raspberry & Walnut Porridge

Our dairy-free coconut milk powder works very well in porridge, as an alternative to cow’s milk.  A lovely, warming start to the day and simple to make - just add to the pan with boiling water and stir well. Add in dried fruit and nuts for extra fibre and protein.  Below is a recipe that serves two:

Serves 2 

Ingredients 

45g of dairy-free coconut milk powder

2 cups of gluten-free oats

Handful of raspberries

25g shelled walnuts 

300ml hot water 

  • Add 45g (approx. 3 tablespoons) of vegan coconut milk powder into a pan and pour in a splash of hot water.  

  • Blend the powder into a paste.  

  • Continue adding 300ml of hot water into the pan, stirring continuously until the coconut milk powder has dissolved.  

  • Add in 2 cups of gluten-free oats to the pan.

  • Stir well for 4-5 minutes (add in extra water if required). 

  • Top with raspberries and walnuts. 

  • Serve immediately.
