Coconut, Sweet Potato, Spinach & Chickpea Curry

Our dairy-free coconut milk powder is a convenient alternative to liquid coconut milk, as you can add as little or as much as you like to recipes, then re-seal the bag to keep it fresh. 

Our coconut milk powder is gluten and dairy-free and contains 65% coconut oil, to give you a good hit of lauric acid! Blend it with a selection of vegetables and a good quality curry powder, to provide a healthy, hearty dinner.  Dried coconut milk has a much longer shelf life than liquid coconut milk once opened, so you’ll waste less. Its a great thickening agent for desserts or cakes and it gives a creamy consistency to curries and hot drinks.

Below is a recipe for two people, using The Coconut Company vegan coconut milk powder, sweet potato, chickpeas and spinach:  

Serves 2 


Ingredients 

1 large sweet potato 

2 small potatoes

1 can of chickpeas 

100g fresh spinach 

40g of dairy-free coconut milk powder (2 heaped tablespoons) 

150g basmati rice 

2 teaspoons of curry powder of your choice 

2 handfuls of chopped coriander (optional) 

Lime wedges to serve (optional) 

Salt & pepper to season

Boiling water 

  • Peel the sweet potato and potatoes and cut into 2cm chunks.  Boil for 10 minutes to soften.  

  • Wash the basmati rice and boil for 10 minutes.  Take off the heat and leave to stand. 

  • Heat 40g of dairy-free coconut milk powder in a pan for 30 seconds whilst stirring.  Make sure it doesn’t burn.  

  • Add 500ml of water into the pan and bring to the boil, stirring continuously until the coconut milk powder has dissolved. 

  • Add the sweet potato, curry powder, potato and drained chickpeas to the pan of coconut milk and leave to simmer for another 5 minutes.  Stir well. 

  • Add the fresh spinach to the pan and stir until it wilts. 

  • Add more boiling water, coconut milk powder or salt if required to your desired taste levels.

  • Serve alongside the basmati rice, with chopped coriander on top and lime wedges on the side.
